Perfectly Melty Fondue

I love cheese.

Melted cheese is even better.

Melted cheese on bread is about as close to heaven as I think I can get.

I’m also very much an 8-year-old at heart, and love food that’s fun to eat. This is the fondue that my mom used to make when I was a kid. After trying a bunch of other recipes, it’s the same one that I still make today.

Perfectly Melty Fondue

1/2 lb. Jarlsberg, grated
1/2 lb. Gruyere or Emmental, grated
1 clove garlic, mashed
1/2 cup dry white wine
3/8 cup heavy cream
1 Tbls. flour
1/4 tsp. nutmeg
1/4 tsp. white pepper
1/4 stick of salted butter

Melt the butter in a heavy pan and stir the flour into it. Cook, stirring occasionally, until just slightly light brown (you want a blonde roux). Add the heavy cream and wine. Whisk to combine. Add the nutmeg and white pepper and bring to a simmer. Add the cheese by the handful, stirring until it’s all melted.

Serve with chunked up French bread.
