I can't eat gluten so I made this with white rice flour, so it turned out extra crispy :) I love eggplants to begin with, but now I love them even more (if that's possible) I put half aside to put in the freezer but now I'm taking them back out because they're disappearing as we speak lol WOW..what can I say..these were phenomenal.
