		<description>To eliminate the huge crack in your cheesecake, put a rimmed pan in the oven under the rack with the cheesecake and fill it with a cup of water. When the cheesecake is done, prop open the oven door with a wooden spoon or two oven mitts and let it cool in the oven for an hour or two. Then take it out of the oven and let it cool more. My mom taught me this when she made all the cheesecakes for my wedding.  (:</description>
