Pad Thai, perhaps Thailand’s most infamous noodle dish, has dozens of incarnations—including several regional variations—each one a slightly different take on the mouthwatering combination of sweet, salty, and sour flavors. Some are super spicy, and some—like this recipe—are very mild. Regardless of your recipe, this is one of those dishes that’s all prep and very little actual cooking.

Chili Garlic Beef Ribs
This recipe is so easy, it’s kind of like cheating. I’m OK with that, though. (I’m all for fancy sauces and complicated meals. But there’s a definite time and a place for dishes like this.) It takes no time to slap together—then your oven does all the hard work.
Chipotle Lime Chicken Fingers with Sour Cherry Compote
These chicken fingers are a perfect foil for one of my favorite flavor combinations: chipotle and lime. They’re hot and spicy—and a little bit tart from a few squirts of fresh lime juice. A quick dip in a side of sour cherry compote cools them off just a smidge. And adds a touch of tangy sweetness.
Cranberry Almond Trail Mix Cookies
The recipe is my version of a super-yummy cookie that Whole Foods sells. They’re a real treat, but at almost $7 for a handful of cookies, I wanted to see if I could noodle out a similar recipe at home, based on one of my oatmeal cookie doughs. These come pretty close—and cost a lot less!
