Ginger and Maple Glazed Chicken Wings

Wednesday February 24th 2010

The humble chicken wing is so cheap—and so satisfying. (Plus, come on: What self-respecting carnivore doesn’t like to gnaw a little meat off the bone every once in a while?)

Prosciutto and Basil Wrapped Chicken Fingers

Monday August 31st 2009

These chicken fingers are fast food, Mouse-House style. They’re the perfect thing to make when you Just Need To Eat, Like Now (a fairly common occurrence at our place these days, given that we just moved).

Chipotle Lime Chicken Fingers with Sour Cherry Compote

Monday August 10th 2009

These chicken fingers are a perfect foil for one of my favorite flavor combinations: chipotle and lime. They’re hot and spicy—and a little bit tart from a few squirts of fresh lime juice. A quick dip in a side of sour cherry compote cools them off just a smidge. And adds a touch of tangy sweetness.

Basic Homemade Chicken Stock

Thursday April 16th 2009

There are a lot of methods for making chicken stock. Some folks make it in the slow cooker. Some folks make it in the oven. This is one of the ways that I make mine on top of the stove. It’s a good, basic method and yields a richly flavored, golden chicken stock that’s a [...]

Oven-Baked BBQ Chicken

Monday April 13th 2009

OK, so this is cheating. Well, sort of. This may not be real barbecue, but it is one of my favorite ways to make chicken legs: Indoors. In the oven. Seared, then smothered in hot, spicy sauce and slow baked. Let’s face it: Nothing can replace good, outdoor barbecue. But, sometimes you just don’t feel [...]

Blackened Chicken Fingers with Lime-Infused Marmalade

Monday March 23rd 2009

Mmm, mmm, mmm. We love spicy food at The Mouse House. You know…the kind that makes your nose sweat just a wee bit? These chicken fingers are hot and spicy on the outside and juicy as can be on the inside. A quick dip in a buttery, lime-infused marmalade knocks the edge off the heat [...]

Sweet Chili Chicken Drummettes

Monday March 2nd 2009

This is one of my favorite things to serve at a cocktail party. These Sweet Chili Chicken Drummettes are easier to eat than chicken wings, and are sweet and spicy with just a little bit of crunch. It doesn’t take a lot of ingredients to create a heavy dose of flavor. These drummettes get a [...]

Deep-Fried Chicken Fingers with Crispy Cheez-It Crust

Friday February 13th 2009

It’s Friday the 13th and the day before Valentine’s Day. There’s a dizzying array of mouthwatering, chocolate-y recipes out there this week. So…let’s make something fun and crunchy. Mouse discovers Cheez-It breading. Film at 11. It didn’t happen exactly like this, but this is close enough.

Chicken & Apple Sausage Sub with Caramelized Onions, Peppers & Brie

Monday December 15th 2008

This is the perfect kind of sandwich to throw together on nights—like tonight, at the Mouse House—that you don’t have a lot of time to spend in the kitchen. You can use almost any combination of sausages and cheese. In this case, I had a package of Brice Aidells smoked chicken & apple sausages and [...]

The Angry Chef’s Garlicky Lemon-Pepper Chicken

Friday November 28th 2008

A lot of folks have asked me for this recipe. It’s one of The Angry Chef’s signature dishes, and I was lucky to pry it away from him. This recipe is a dream come true for garlic lovers like me. It’s tart and garlick-y and oh-so-fragrant in all the right ways. (As a bonus, you’ll [...]
